Sattvik 2012 kicks off with new dishes on the platter

Like every year, Amdavadis flocked to IIM, Ahmedabad, new campus where the food festival is being organised by Society for Research and Initiatives for Sustainable Technologies and Institutions.

Pizza sold here has a different Indian flavour. With a base of five flours and topping of nutritious vegetables and chilli flakes, ‘panchdhan na pizzas’ sell like hot cakes at Sattvik- 2012, the traditional food festival which started from Saturday. Delicacies made from forgotten grains like kodri-thepla, dhokla, bhaidku and dhanshak, with a touch of innovative culinary skills, are also very popular.

Like every year, Amdavadis flocked to Indian Institute of Management, Ahmedabad (IIMA) new campus where the food festival is being organised by Society for Research and Initiatives for Sustainable Technologies and Institutions (SRISTI).

This time, around 110 different stalls are selling around 300 varieties of delicacies - region and religion specific. Delicacies which attract attention include bajra ni rabdi, pumpkin shrikhand, panchdhan na pizza, khatta, ma ki dal, amritsari kadi, pitha and sattu litti.
 While items from different regions like Karnataka, Rajasthan, Bihar and Himachal Pradesh are on the menu, for the first time Sattvik also has traditional food of Jews and Parsis.

Many people were seen splurging on traditional Gujarati delicacies like khichu, rotla, baigan bharta, to name a few. One of the regular visitors at Sattvik, Meghavi Shah, said she waits for this part of the year. “The food is amazing as always. When at home, we don’t eat delicacies made from traditional grains. Here we splurge on them,’ she said.

While people enjoyed the food some gave suggestions to make the event more people-friendly. “They need to provide tables and chairs so that people can sit and eat leisurely. They should also give paper napkins,” said another visitor JP Modi who was enjoying bajri bhaidku with his family.
