The Great Himalayan Food Expedition at Trident Hotel, BKC

The ongoing Himalayan food festival is nothing short of transporting your gastronomic gut to the Himalayas...

If you can't go to the Himalayas, let the Himalayas come to you...and if you are still wondering how, head straight to the Trident Hotel, Bandra Kurla Complex, Mumbai. Get a sample of the Himalayan cuisine at the ongoing 10-day food expedition at 022, from 17th-27th February, 2015. Chef Jeewan Singh Rawat specially travelled to the region to put together a Himalayan feast! 

“Himalayan cuisine is very simple and rustic. The ingredients, which are grown in the lap of nature are very different and can't be sourced from any other part of the country. For instance, Jakhia ( a unique tempering ingredient), Bhatt (a locally-grown black bean lentil), Jhungar (region-specific small-grain rice) and gahat dal,” explains the chef. 


According to the chef, who has travelled to various parts of  Kumaon and Garhwal region of Uttarakhand, rice and roti with vegetables and lentil are the staples here. “Lentil plays a very important role in the cuisine. They also have a special staple bread, Mandue ki roti,” he adds.

At the ongoing festival, Chef Jeewan has added a flavourful touch to the cuisine by fusing two local dishes, “I came up with a dish which is a mix of two preparations of Himalayan cuisine—gahat kofta kapli. Its basically a regional spinach preparation that is cooked together with the dumpling, which is made out of gahat dal . It’s a result of my creativity and a tribute to the Himalayan cuisine,” he says. 

At the expedition, expect to enjoy the rustic flavours of indigenous ingredients like pahari noon (salt), jakhiya (black spice used for tempering), bhatt ki dal (lentils), jhugar (rice) and mandua (grain), which lend their authenticity to the dishes prepared by the chef. You can also sample cuisines from Uttarakhand, Himachal Pradesh and Kashmir, on a buffet for lunch and dinner from 17th– 27thFebruary, 2015 at Trident, Bandra Kurla, Mumbai.
