1) Cafes by the kerb
The trend is popular across the world  and immortalised by France. A coffee on a balmy afternoon, tastes so much better when you’re in a cafe on a street across from the sea with your own vantage point to all the comings and goings of the city. Kerbside cafe’s have evolved into a way of life in French cities where the people enjoy their choice of beverage along with a newspaper or casual conversation. The future of this is bleak though, considering the laws in place today.

2) French restaurants

Croissants and quiches can be considered no more than a mere whiff of the feast  this country offers. We continue to hide under the umbrella term of ‘continental food’ venturing out merely to Italian, American and Chinese shores. Wine, cheese, butter, cream — all practically owe their origins to this nation. It is high time we knew our pate de foie gras from a nougat and macroons from the bouillabaisse.

3) Drive-in eateries
If we can hope for drive-in theaters, why not drive in restaurants. They evolve around the concept of dining in one’s own automobile as a “carhop” delivers your order. Drive-in restaurants offer the same cozy atmosphere as drive-in theaters and are a welcome change from the usual fare.

4) Organic restaurants
One trend that is snowballing towards us is organic foods. Farm fresh food has definitely arrived on to the scene and is making its presence felt. These foods are 100% organic using zero pesticides and healthy livestock. Organic foods are bringing down the canned food culture. This trend had evolved to such a great
extent that now people prefer to buy their raw ingredients directly from the farmer.

5) Indian fete
It is unfair that even today many of our varied, delicious indigenous cuisines still aren’t getting enough of the spotlight. Hence, a trend we would really like to see is the conglomeration of all Indian cuisines under one roof.
